Fresh Citrus Jelly

Ingredients:

3 Oranges
1 Lemon
1 Lime
300 ml Water
75 grams Sugar
1⁄2 teasp. Orange flower water
15 ml or 6 sheets of Gelatin (soaked in cold water)

Method:
In a saucepan, combine the zest of 1 lime and 1 orange with the water and sugar. Bring the water to a boil and then remove from heat. Squeeze the juices from the oranges, lemon and limes and stir it into the pan. Add the orange flower water. Strain the liquid into a measuring jug to remove the zest. Add the gelatin and pour the mixture into a mold. Add orange segments and refrigerate until the mold is set.
